Peanut Butter Cookie Happiness

I had been craving peanut butter cookies for about two weeks,
so I broke down this weekend and made some.
It's been a long time since I made them
 because they are like crack to me.
I can't say no!
So I put it off as long as I could,
but my will shattered and I had to bake them.

They turned out pretty well,
but if you like thicker cookies then you probably
 want to search for a different recipe.

Classic Peanut Butter Cookies

Ingredients:

1 cup unsalted butter
1 cup crunchy peanut putter
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons baking soda.


Cream together butter, peanut butter and sugars.  Beat in eggs.


In a separate bowl, sift together flour, baking powder, baking soda, 
and salt.  Stir into batter.  Put batter in refrigerator for 1 hour.



Roll into 1 inch balls and put on baking sheets.  Flatten each ball with a fork, 
making a criss-cross pattern.  Bake in a preheated 375 degree F oven for 
about 10 minutes or until cookies begin to brown
(I only had to bake mine for 8 minutes, so adjust for your oven).




And because there wasn't enough sugar in them already
cough, cough
I added a little more on top of them.

Thanks Amy. I would bring some over to share if there were any left. This is why I don't bake much - we have no self control in this household. ;)
